Quick & Healthy Lemon Garlic Salmon with Veggies.

Ingredients (Serves 2):
For the salmon:
- 2 salmon fillets (skin-on or skinless)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 teaspoon honey or maple syrup (optional, for a touch of sweetness)
- 1 teaspoon dried oregano or thyme
- Salt and pepper to taste
For the veggies:
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced into rounds
- 1 cup broccoli florets (fresh or frozen)
- 1 tablespoon olive oil
- Salt, pepper, and a pinch of chili flakes (optional)
Instructions:
Prepare the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Season the salmon:
- In a small bowl, mix olive oil, minced garlic, lemon juice, honey, oregano, salt, and pepper.
- Place the salmon fillets on the baking sheet, and spoon the mixture over them, ensuring even coverage.
Toss the veggies:
- On the same baking sheet (or a separate one if needed), arrange the cherry tomatoes, zucchini, and broccoli.
- Drizzle with olive oil, and sprinkle with salt, pepper, and chili flakes. Toss to coat.
Bake:
- Place the baking sheet in the oven and bake for 12–15 minutes, or until the salmon flakes easily with a fork and the veggies are tender.
Serve:
- Plate the salmon alongside the roasted veggies. You can garnish with extra lemon wedges or fresh herbs like parsley or dill.
Tips:
- If you want carbs, serve with quinoa, brown rice, or a slice of whole-grain bread.
- To save time, use pre-chopped veggies or frozen broccoli.
