 Quick & Healthy Lemon Garlic Salmon with Veggies

Ingredients (Serves 2):

For the salmon:

  • 2 salmon fillets (skin-on or skinless)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 teaspoon honey or maple syrup (optional, for a touch of sweetness)
  • 1 teaspoon dried oregano or thyme
  • Salt and pepper to taste

For the veggies:

  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced into rounds
  • 1 cup broccoli florets (fresh or frozen)
  • 1 tablespoon olive oil
  • Salt, pepper, and a pinch of chili flakes (optional)

Instructions:

  1. Prepare the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

  2. Season the salmon:

    • In a small bowl, mix olive oil, minced garlic, lemon juice, honey, oregano, salt, and pepper.
    • Place the salmon fillets on the baking sheet, and spoon the mixture over them, ensuring even coverage.
  3. Toss the veggies:

    • On the same baking sheet (or a separate one if needed), arrange the cherry tomatoes, zucchini, and broccoli.
    • Drizzle with olive oil, and sprinkle with salt, pepper, and chili flakes. Toss to coat.
  4. Bake:

    • Place the baking sheet in the oven and bake for 12–15 minutes, or until the salmon flakes easily with a fork and the veggies are tender.
  5. Serve:

    • Plate the salmon alongside the roasted veggies. You can garnish with extra lemon wedges or fresh herbs like parsley or dill.















Tips:

  • If you want carbs, serve with quinoa, brown rice, or a slice of whole-grain bread.
  • To save time, use pre-chopped veggies or frozen broccoli.
